When we went to Barcelona, Spain a few years ago I probably ordered gazpacho in every restaurant. It tasted so good. It has all the same ingredients as the gazpacho you get in America, but the way they prepared it is different. This preparation makes it oh, so yummy!
It has a smooth creamy consistency ( no dairy) with chunky bites. I am also able to get all these ingredients at the farmer’s market this time of year.
What you will need
4 cups tomatoes, roughly chopped. Any tomato will do, but I like to add at least one orange tomato for extra creaminess
2 small or 1 large garlic clove
1 Tbsp olive oil
A few basil leaves
1 tsp salt
Peppers of various color (I use green, yellow and orange or red)
Scallions or finely chopped onion
In your blender combine tomatoes, garlic, olive oil, basil and salt and blend to a creamy consistency. I have a vitamix and it only takes a minute. If you don’t have a super powerful blender it may take longer.
Then chop the rest of the ingredients and sprinkle your desired amount on top.
Benefits of the ingredients
Tomatoes are high in lycopene which fights various forms of cancer. When you combine olive oil with your tomatoes your body can absorb even more of the lycopene. Tomatoes are also anti inflammatory and full of water.
Basil is clarifying for your mind and your mood
Unbleached salt like pink himalayan salt or grey celtic sea salt are full of trace minerals you can not get any where else and salt is good for your adrenals. So, if you do not suffer from high blood pressure there is no reason to fear healthy salts that have not been processed and bleached.
Garlic is anti inflammatory and anti viral. When consumed raw like in this recipe it is even better for you.
Cucumbers are very good for your bones due to the silica content. They also have a lot of water in them and are cool, crunchy and refreshing.
Peppers are high in vitamin C
Onion are a good source of antioxidant. Green onions taste yummy and the local sweet onions I got for this do too!
